In the high-altitude valleys of South Sulawesi, coffee trees thrive in iron-rich volcanic earth. Here, wild civets roam free beneath the forest canopy, selecting only the most perfectly ripe cherries.
The Toraja Microclimate
Nestled 1,500 meters above sea level, our Toraja beans are shaped by dramatic temperature swings between humid days and misty, cool nights. This slow maturation concentrates complex sugars within the seed, yielding an incredibly structured cup.

Roast Profile: Medium-Dark. Hand-sorted and washed in mountain spring water before a slow, uniform roast that coaxes out deep notes of dark cacao and cardamom.
